Grade Tiers: What “Food Grade” Actually Covers
“Food grade” is a floor, not a grade. It means the material is legally fit for human consumption — nothing more. Within that floor, exporters work with three commercial tiers, and the differences are measurable.

The single most useful number on that table is acid-insoluble ash. It is a proxy for sand, soil, and grinding-stone contamination, and it is difficult to fake because it is cheap to test. A lot claiming premium volatile oil but showing 1.2% acid-insoluble ash is telling you the drying floor was not clean, regardless of what the flavour panel says.
The Nine Parameters, Ranked by What They Cost You
Every serious buyer of food grade spice powder should require these on the Certificate of Analysis, per lot, not per shipment:
- Volatile oil content — the value driver. Measured by steam distillation, expressed ml/100g. Below 12 you are buying filler.
- Moisture — controls caking, mould risk, and volatile loss in transit. Under 10% at packing is the working ceiling for tropical lanes.
- Total ash and acid-insoluble ash — mineral load and contamination proxy respectively.
- Mesh / particle size distribution — request a sieve analysis, not a single number.
- Microbiology — Total Plate Count, yeast & mould, Salmonella absent /25 g, E. coli absent /g.
- Sterilization method — steam, ETO, or irradiation. This is a compliance issue, not a preference (see below).
- Aflatoxin — B1 and total, tested against your destination limits.
- Pesticide residue — screened against EU Regulation 396/2005 MRLs for European entry.
- Heavy metals — lead, cadmium, arsenic, mercury.
Two of these routinely surprise first-time importers. Parameter 6 matters because ethylene oxide is banned as a spice treatment in the EU and UK, and ETO-treated lots have triggered high-profile recalls; steam sterilization is the safe default for European-bound spice powder COA documentation. Parameter 4 matters because clove powder behaves very differently at 60 mesh (visible speckling, slower extraction) versus 100 mesh (uniform colour, faster release) — a dry-rub manufacturer and a beverage extract producer should not be buying the same mesh.
Adulteration: The Three Tricks That Do Not Show on a Basic COA
Clove is one of the more adulterated spices in global trade, precisely because grinding hides the evidence. Three practices dominate:
- Spent clove. Buds that have already been steam-distilled for eugenol oil, then dried and ground. They look identical. Volatile oil testing catches this immediately — which is why some suppliers quote everything except volatile oil.
- Stem and mother clove. Clove stems and mother cloves (the fruit) are legitimate botanical material but carry far less eugenol and are much cheaper. Codex standards generally cap stem content around 5%; anything higher dilutes potency without appearing as “foreign matter.”
- Bulking agents. Rice husk, date seed powder, or exhausted spice residues. Detected via acid-insoluble ash, starch microscopy, or crude fibre analysis.
Your defence is procedural, not analytical: require volatile oil on every lot COA, run one independent verification on your first three shipments, and ask the supplier which mill and which drying cluster the lot came from. An exporter who can answer that in one email is running a traceable operation. One who cannot is a trader, and you are buying whatever the market gave them that week.
Turning the Spec Into a Contract Your Supplier Can Actually Hold
A specification only protects you if it is written into the purchase agreement with tolerances and a remedy. Practical structure for bulk spice powder wholesale contracts:
- State target and reject limits separately. “Volatile oil ≥ 15 ml/100g target, ≤ 13 reject” is enforceable. “High volatile oil” is not.
- Define the test method and the lab. Steam distillation per ASTA or ISO method, at a named third-party lab, with cost allocation stated for retests.
- Set the sampling point. Pre-shipment at origin, post-arrival at destination, or both. Volatile oil measured at packing and measured after 45 days at sea are not the same number.
- Specify packaging explicitly. 25 kg multi-wall kraft with food-grade PE liner, heat-sealed, palletized and shrink-wrapped. Liner thickness matters more than bag branding for moisture control.
- Require the document set up front: Certificate of Analysis, Halal certified spice powder documentation, Phytosanitary Certificate, Certificate of Origin, and HACCP compliant ingredient records for the packing facility.
- Agree the shelf-life basis. Typically 24 months from packing in sealed original packaging, stored below 25°C and 60% RH — and state that storage outside those conditions voids the volatile oil guarantee.

A Sample Request That Actually Tells You Something
Most sample requests waste both parties’ time because they ask for material without asking for context. A useful request from an Indonesian spice powder exporter includes four things: 200–500 g of powder, the COA for that exact lot, the mesh specification used, and the packing date. Then test in this order — visual and aroma check, moisture on arrival, volatile oil, and finally an application trial at your normal inclusion rate.
Run the application trial last, not first. Sensory panels adapt quickly and will rationalize a weaker lot if they have already anchored on it. The numbers should gate the panel, not the other way round.
If the sample clears, request a second lot before committing volume. Consistency across two lots tells you more about a supplier’s process control than any single premium result — and process control is what you are actually buying when you sign a twelve-month contract.
